Bacon Wednesday: Bacon cheeseburger dip

You just cannot go wrong when Bacon Wednesday involves bacon  and Velveeta. There are certain people, uninformed people, who believe that Velveeta is not really cheese. Haters gonna hate. But that’s okay. More Velveeta for the Chicks.

Betsy basically made this recipe up after finding something similar on the Internet that involved “beef crumble pizza topping” and jarred bacon pieces. Can you imagine anything more unnatural than that? Velveeta? Haters gonna hate. This is not in the recipe, but Betsy also decided to top the mixture with just a swirl of sour cream. It was a wise decision.

Bacon Cheeseburger Dip

1/2 pound ground beef

1/2 cup diced onion

Salt and pepper to taste

1 8-ounce package Velveeta

6 strips cooked bacon

Frito’s Scoops

Saute the ground beef and onion over medium heat until the beef is well browned and the onion is translucent. Salt and pepper to taste.

Put cheese in a microwave-safe container and microwave on high, stirring once, for 3 to 5 minutes or until cheese is melted. Add ground beef and onion mixture and combine.

Chop the cooked bacon and sprinkle over the top of the dip. Serve with Frito’s Scoops (no substitutions – don’t make us come after you).
